Tips on Seasoning Beef & Red Meat

When you’re cooking beef, keep these things in mind for some super flavorful outcomes…

Let’s Marinate!

Marinating is when you soak meat in a liquid with seasonings for a period of time so the beef breaks down a little and absorbs the flavors you’re going after.

Before we get to the best spices to use when crafting your marinating, let’s talk about the common liquid bases that can be used when marinating red meat:

  • Olive oil
  • Soy sauce
  • Fish sauce
  • Broth
  • Buttermilk
  • Plain yogurt, Greek works well
  • Worcestershire sauce
  • Water
  • Vinegar
  • Mayonnaise
  • Lemon or lime juice
  • Pineapple juice (it’s best to marinate for only an hour or less because it has this active enzyme in it that breaks down the fibers of the meat. If you leave it for too long, the meat just fall apart in a not-great way)
  • Wine, beer or other alcohols can be good for some dishes, but don’t use too much because it can break down the meat too fast and result in texture issues

You’ll need some form of salt along the way – whether by adding a type of salt directly in the liquid with the spices or by using the salt within a specific liquid you choose (like soy sauce). Salt helps the flavors penetrate the meat deeper than just the outside layer and makes more savory flavors pop.

Depending on what you’re making, your dish may benefit from using a little bit of sugar or honey as a tool to caramelize flavors or balance things out.

Acid is another tool that can be used to balance flavors, but should be used strategically. It can break down meat too much if used heavily or left marinating too long. (Contrary to popular belief, you don’t HAVE to use an acid when you marinade).

When creating a marinade, you can toss in fresh fruit. Popular fruits for marinades include:

  • Papaya
  • Kiwi
  • Mango
  • Pineapple (careful, not too much)
  • Lemon
  • Lime
  • Grapefruit
  • Oranges
  • Passion Fruit
  • Pomegranate

Tossing in veggies are a great way to build more flavor profiles. These are some of our favorites to use:
