I really like my grilled chicken to have lots of flavor and be tender but not dried out. This recipe has lots of flavor but not too spicy and it’s fall off the bone tender and moist.

It’s also made ahead so you can have your grilling out of the way before company comes. Yes, it’s a great company dish but you can also make a large amount and it’s great cold for lunch all week.

Instructions

  1. Toss to mix chicken, salt and poultry seasoning
  2. Let set for an hour in the fridge or overnight.
  3. Grill on 450 for a few minutes per side till mostly done on both sides but not completely done.
  4. Put in a roaster and bake covered on low heat (300) for about 2 hours till tender. The time will depend on how done the chicken is and drumsticks may take longer than boneless thighs. There will a little juice in the bottom of the roaster which can be used to flavor vegetables or potatoes.

 

Notes

You can refrigerate this for 1-2 days before baking.
