Surprise Pizza Casserole
If I had my way, pizza would be on my menu multiple times a week, but lots of carbs in the typical pizza crust isn’t the best for me. This casserole fills my taste for pizza and gets more vegetables in at the same time.
You gain more protein because of the eggs in the base. The flavor is enhanced by Buffy’s garlic seasoning!

- 1 lb. frozen & thawed riced cauliflower
- 5 eggs
- 1 tsp. salt
- 1 tsp. organic Buffy’s garlic seasoning
- 1 tsp. organic Italian seasoning
- 1 cup mozzarella cheese shredded
- 1 lb. or less Italian sausage, pork or turkey
- 1 medium chopped onion
- 1/2 cup chopped green pepper
- 2 cups spaghetti sauce of choice
- 1 cup more mozzarella cheese shredded for topping
- 2-3 oz. chopped pepperoni for garnish
Instructions
- Preheat the oven to 400 degrees
- Spray a 9×13 non-glass pan with oil
- Mix the cauliflower, eggs, salt, Buffy’s, Italian seasoning, and 1 cup mozzarella cheese in a bowl
- Pour into pan, level/smooth, and cover pan with foil
- Bake for 20 minutes covered, then uncover and bake 20 minutes or until browned at the edges
- While the base is baking, brown the meat, and vegetables in a skillet. Add the sauce. Mix well.
- When the base is done, remove from the oven and pour the sauce on top, spread around and top with cheese and pepperoni
- Optional: Sprinkle with a little more Italian seasoning, and Parmesan cheese
- Put back into the oven on broil until the cheese is melted
