Low-Sugar Cinnamon Granola
Granola that wasn’t as sweet but still has the classic crunch was what I was after. I added water to a favorite recipe (with a few other minor changes) and that was the trick. This one also has the added flavor of browned butter – yum!

Ingredients

- 1/2 cup butter
- 1/4 cup honey
- 1/4 cup coconut sugar
- 1/2 cup water
- 2 tsp. vanilla
- 1/2 cup chopped pecans or other nuts
- 4 cups rolled oats
- 1/2 cup pumpkin seeds
- 1/2 cup coconut
- 2 tsp. cinnamon of choice (Pinch offer organic Cassia, Ceylon and Saigon)
- 1/2 tsp. salt
Instructions
- Preheat oven to 275
- Put butter in a 3 quart pot, heat on medium till butter starts to brown but not black. It goes fast at the end so be watching. You don’t want a burnt flavor.
- Remove from heat and add honey, coconut sugar (or brown sugar), water.
- Whisk together, then put back on medium heat till it comes to a boil, boil for about 1 minute.
- Remove from heat and add the rest of the ingredients. Mix well.
- Line a large cookie sheet or 2 pans with parchment paper.
- Pour granola in and bake at 275 for 30-45 min. (Check every 15 minutes and stir because the edges will get brown before the rest. If you have it in a very large pan or 2 large pans, then it may get done faster if it’s spread out farther.)
