Did you know that you’re not alone in avoiding garlic? There are some regions / cuisines / religions around the world that also avoid eating it for various reasons, for example:

  • East Asian Buddhist temple dishes cooked in the Sachal way avoids strong, pungent herbs (called gofhins or osinchae) like garlic because they believe they agitate/stimulate the mind, gut and body, which is not ideal for meditation. The cuisine instead focuses on using ginger, shiitake mushrooms, soy sauce, and sea salt for flavor inspiration.
  • Jain Cuisine is a type of Indian cooking based in strict religious non-violence. It  bans garlic, onions and other underground root vegetables.
  • Many orthodox Hindu diets avoid garlic and onions, using spices like asafoetida (hing) and ginger for depth.
  • Ayurveda cuisine divides foods into categories of sattvic (goodness and purity), rajasic (passion and activity), and tamasic (ignorance, darkness, and lethargy). Garlic is considered rajasic and tamasic. Believers say it stimulates anger, aggression, and sexual desire, while also causing mental dullness and clouding awareness (making spiritual focus and meditation difficult). 
  • People with allium allergies or sensitivities (garlic belongs to the Allium plant family).
  • Japanese Washoku cuisine typically doesn’t use garlic because they say it overpowers the more subtle, delicate flavors of their seasonal and traditional dishes. Instead of garlic, they use dashi broth, soy sauce and miso.
  • Kashmiri Pandit Cuisine is a Nroth Indian regional diet avoids garlic, onion and tomatoes and leans on yogurt, black and yellow mustard, fennel, asafoetida and ginger powder for flavor.

     

     
     

Substitutes for Garlic to Get Similar Flavors

Here are some substitutes for garlic (whether fresh, powdered, granulated, pasted or minced) to get close to some of the same flavor profiles.

There are some wider options here that aren’t perfect 1:1 substitutions, but they will all add layers and depth to your dishes and go after some of the flavor you’re looking for when omitting garlic. What you decide to use instead will depend on the type of recipe you’re cooking:

  • Asafoetida (aka “Hing”) – WARNING: This is a great sub but use in much, much smaller quantities than you’d use garlic – it’s very strong and too much will instantly ruin your food. Start with a miniscule amount and taste test before adding more. 
  • Powder, granulated or minced onion
  • Shallots
  • Ginger powder
  • Green chili paste
  • Fennel (especially toasting fennel seeds)
  • Chives
  • Leeks
  • Green onion
  • Celery seed or celery salt
