As a person of Greek heritage, anise has always been a very important part of my culinary upbringing. My grandmother used to make a bread for holidays with whole anise seeds. Later my Uncle Ted created a version of that same bread as single dinner rolls, which we affectionately referred to as “Ted’s Bread.” The family knew the bread was coming because while it was in the oven the entire house was filled with the scent of anethole (the volatile molecule that gives anise its characteristic smell).
Fast forward, and I am now gluten free. I recently created a GF version of my family’s anise bread. The problem is that I have not been able to find any anise seeds that smell like much of anything. All the seeds that I have bought in bottles from the store have been old and stale (probably sitting around for years). I have tried three bottles of organic anise seed from grocery stores and baked multiple loaves of bread, but so far the anise flavor has been weak in all of them.
Then I discovered Pinch. As soon as I opened the package of organic anise seeds, I was hit with a wave of nostalgia as I inhaled the characteristic anise flavor. These are high quality anise seeds. I can’t wait to bake my next loaf of bread with them.
