The classic salt of French cuisine, grey salt is evaporated in clay ponds, which gives it a blueish hue and an almost wet texture. The flavor of the ocean permeates and gives this salt a briny flavor. This is my personal everyday (yet luxurious) salt.

    How lovely, not just in flavor but also in texture and appearance! Less salty than standard sea salt, with a fairly complex flavor you wouldn’t expect from a sea salt.
    This wonderful salt will be perfect to use in recipes that are more simple, without lots of spices and flavors. For my own personal use, it might be a bit light as a daily salt, and I certainly wouldn’t want to waste it in baking recipes, but as a specialty salt to be used throughout the week it will be perfect. I’m especially looking forward to using it in recipes that might need just a hint of saltiness, as it seems it would be hard to overdo it with this nice, light salt.
