Sichuan pepper is a spice not commonly used in the West, but it’s gaining popularity. I’m thrilled to be asked about this delicious spice more and more by customers. It has a bright citrus flavor with little to no heat. But don’t let the “no heat” fool you – it also has a numbing effect, so you want to use it sparingly. Sichuan is known as sansho in Japanese cooking. We use it in our Chinese Five Spice Seasoning.
