A fusion of Cuban and Tex Mex. Traditional Cuban mojo is usually a marinade with a heavy dose of garlic, oil and citrus. Our Texas Mojo has high quality garlic, dried orange zest and splashes of Texas-grown Pequin chilies. Easily make a mojo chicken/shrimp/steak/pork marinade by mixing 1 Tablespoon of this spice (more if you want it to really pop) with 1/4 cup cooking oil, 2 Tablespoons water and 1/4 cup citrus (we like orange juice). Refrigerate for a few hours or overnight. It also works great as a dry rub, in chili, on veggies or even in shakshuka.

    I decided to try this for the first time on a big “project” hunk of pork. If you read Serious Eats, it is their recipe for a big ol’ pork shoulder, bone-in. The goal was to “feast for days.” They call for just salt and pepper, but I decided to go whole hog.

    It worked incredibly well. Even with having burned some of it with the high heat application, it tasted and smelled wonderful. And the spices are interesting and flexible enough that even with doing things like putting leftovers in ramen, it worked.

    Often these hotter spice blends end up being about heat and not much else. I tried Texas Mojo on pork cutlets and found it has a real depth of flavor and complimented the natural flavor of the meat beautifully, flavorful but not overpowering. Send me 5 kg of it, it’s the bomb!!

    When I use beef in Tex Mex, I like to make my own blend. But when I use chicken or pork, I like to break out the Texas Mojo! It’s lighter than ancho forward blends, but still complex and savory and reminiscent of Texas and Latin American cuisine. I would be interested in trying it with a bit of lime included to get even closer to that Cuban mojo vibe.
