Ajwain Seed

Ajwain is rarely seen in Western cooking, but is essential to many Indian and African dishes.  It has an intense flavor similar to the herb thyme.  We use it in our Ras El Hanout and Chaat Masala blends.

Aleppo

We love this now popular chili that is very common in the Mideast, particularly in Syria and Turkey.  Aleppo is very mild when compared to other chilis, with a heat level similar to ancho chili.  The flavor is very bright, fruity, and slightly salty with notes of sun dried tomato and fresh red bell pepper.  Sprinkle it on any dish as garnish.

Allspice Powder

Native to the western hemisphere, allspice is a berry that has a soft sweet clove flavor.  Excellent for sweet dishes and savory alike.  We are often asked what spices are in our Allspice blend?  The answer is that allspice is a spice all on it’s own. Originally from the Caribbean and brought to Europe and beyond by early explorers as a substitute for black pepper. We use it in many of our blends: apple pies spice, pumpkin pie spice, ras el hanout, ethiopian berbere, and baharat to name a few.

Allspice Whole

Amchur

Certified organic amchur is hard to come by, however through persistence and patience we are now able to offer this amazing organic amchur.  Essential to countless Indian dishes, amchur is ground dried green mango.  It lends a wonderful soft tartness with a hint of honey like sweetness to any dish.  We highlight this flavor in our Chaat Masala.

Ancho Pepper Powder

Ancho is simply a sun dried poblano pepper, which is similar to a green bell pepper with slightly more heat. Ancho has a wonderful rich flavor with notes of coffee and chocolate. It is a fantastic spice and essential to chili con carne and mole.

Bird's Eye Chili Powder

Our bird’s eye chili is very fresh and flavorful and sits at about 150,000 scoville units. Black Cumin

Often referred to as aromatic cumin, these seeds have the flavor of cumin and caraway combined.  Very rarely used in American cuisine, they are predominantly used in Indian, Pakistani, and South Eastern European cuisine.

Black Lava Salt

Black Lava Salt is evaporated with activated charcoal derived from coconuts and is native to Hawaii. It salt very strong sea salt flavor and a touch of smokiness. We love it as finishing salt as it looks amazing and can be used sparingly and still have a strong salt flavor. Cardamom Powder

Cardamom powder is the simplest form of cardamom to use.  Simply measure and use.  Generally 1.5 tsp. equals about 10 pods in a recipe calling for whole cardamom.  This is very fresh and will last at least 6 months to a year at peak freshness.

Cinchona Bark

Cinchona Bark is also known as quina and is most commonly used for making tonic water. Historically Cinchona was very important as it alleviates the symptoms of malaria. Today people use it for making homemade tonics and bitters.

Less commonly used than dill, dill seed has a flavor that crosses between fresh dill and caraway seed.  Most often it is used in making pickles, but it is a great subsitute for caraway or cumin in many dishes.

Fennel Pollen

Used primarily in high end Italian cooking, fennel pollen is like turbo charged fennel seed.  I use it as a garnish for roasted pork, rich cream based sauces, and ravioli filling.  It is great in most any dish you want to add sweet fennel flavor.

Fenugreek Seed Powder

Super rich aroma that is the most pronounced aspect of curry powder, fenugreek on it’s own has a bitter earthy flavor.  It is always used in conjunction with other spices, and we use it in many of our blends.  I believe the reason so many people love my Finger Lickin’ Chicken is due to the fenugreek.  I just gives the blend this awesome rich flavor.  Anyway, this is great one.

Galangal Root

Galangal is essential to Thai cuisine, where it sometimes referred to as blue ginger.  It has a very strong flavor and aroma that is almost tea like.  Our galangal is dried and cut.  It can be ground or used whole.

Grey Salt

Gumbo File

This freshly ground file powder will make your next batch of gumbo spectacular.  File will lose it’s potency rather quickly, so we grind this fresh when you order.  Many people simply leave this essential ingredient out when making gumbo and they miss out on a key flavor of the dish.  Fresh file adds a bittering element in addition to helping thicken gumbo.   I like it so much in gumbo I added a touch of file powder to Pinch Spice Market’s award-winning chili powder.

This truly unique product is hand crafted by Pinch.  We take fresh keffir lime leaves and dry them in a high quality flake salt for a month.  Then the leaves are ground and added back to the infused salt giving you an amazing flavor.  Originally we were tasked by a chef to create this salt for a unique salt rim complimenting a signature cocktail, but we have found many uses for this salt.
