I don’t know why I waited so long to make this staple Ethiopian dish. I order it pretty much anytime we are out for Ethiopian food and it showcases the quality of our Berbere spice. You can make this dish in under an hour and make it with just a few basic ingredients.

Ingredients

Scale
  • 1 pound beef sirloin or chuck cubed
  • 2 Tablespoons plus 1/4 teaspoon Ethiopian Berbere
  • 1 Tablespoon course sea salt
  • 2 medium onions sliced thin
  • 6 cloves garlic minced
  • 1 inch of fresh ginger minced
  • 1 can of diced tomatoes
  • 5 Tablespoons butter
  • 1 Tablespoon cooking oil

Instructions

  1. coat the beef with course salt and 1/4 teaspoon Ethiopian Berbere
  2. in a medium pot or small dutch oven on medium heat, melt butter
  3. add onions, garlic, ginger and remaining Berbere
  4. sauté until onions are soft, stirring occasionally
  5. add tomatoes and continue to cook, about 30-45 minutes total
  6. remove braising liquid and puree in a blender or food processor(optional)
  7. heat the same pan you used for the braising liquid on high heat and add cooking oil
  8. sear beef in small batches (don’t over crowd cooking surface), about 2 minutes per side or until golden brown.
  9. when searing is done return all the beef to the pan and pour the braising liquid into the pan. reduce the heat to simmer, cover, and cook for 20-30 minutes.
